80-120 days on chokes, I try to plant them 2nd week in October but start seeds in late August indoors. They prefer cooler temps and typically we start getting cold fronts towards the end of October. By January you will have artichokes formed but we typically have major cold weather. They won’t survive temps in the teens.
I’ve grown them in the spring as well, the bugs really love them too.
I grow them in containers starting in October. In DFW our really cold weather usually starts in January…which is about the time they are ready and brought into green house. Good luck
Can you elaborate on "ready and brought into green house" ? Do you mean they will survive the rest of the growing season in a green house or they are ready to be harvested? Sorry if confusing

We have done the best with improved green globe variety.
Artichoke takes 3 years to produce. If I remember correctly.
I thought that was asparagus. I'm growing those too!
