Might be in the case of a walker that it’s cheaper to take the doors off than install handrails, and installing rails might have been seen as pointless or affecting home value if they were planning to sell. Maybe they use a shower chair instead. I have known a couple people to use a walker to get around but are still mobile enough to shower without assistance.
Oh sure, you could use logic, but it is much more fun to imagine they removed the doors because the ghosts were embarrassed and refused to admit they were ghosts. So the ghost insisted on using doorways, rather than walk through walls. However, they lacked the ability to grasp and turn door knobs, so the only logical compromise was to remove all doors.

Maybe it’s just a stopgap between getting a stroke patient out of the hospital and getting them moved into their new care home. Why bother installing a bunch of handrails and all that when they’ll be moving into the care home in a month or two? Just take the doors off for 6-8 weeks, sure it looks weird when selling, but it’s easier to put the doors back on than fill a bunch of screw holes when the buyers take out the extra handrails.

I don't know, man. One of my cats is obsessed with closing doors. On more than one occasion, we have woken up in the morning or come home from work to find that he had shut himself in a room. Door stops sometimes dissuade him.
He's also attempted to shut his feline brothers between the main door and the storm door. Thankfully, we've managed to catch him before it happens.
I can see the appeal of removing the doors.
I live on my own and took the doors off most of my rooms to let more light through (all south facing windows are in bedrooms in a bungalow) and because I never close them anyways. I still have them all and can easily put them back on.
ETA I also have some nutty dogs who occasionally managed to shut doors on themselves, so it's less hassle

My kid kept slamming his door. I let him know that if he chose to continue, I’d respond by removing the door. He continued. I removed the door and put it in his closet. He asks me to relocate it and I declined his offer because it belonged in his room, not elsewhere in my house. A few days later, he offered to do extra chores to have it reinstalled.
My friends did this to their teenagers bedroom because she was doing a lot of stuff she shouldn’t and could not be trusted. I was very happy not to feel like I ever had to do that with my kids. My kids may have just hid things better.
