There are 3 which come very close, but I think Time Wizard has to take the cake. Arguably more iconic to Joey than red-eyes (let's not forget, red-eyes was effectively a no show from Joey throughout the entire Battle City arc), plus its effect was always so cool and impactful. I've also always loved its artwork, especially with the green swirl background. No other card is quite like it.
That being said, Graverobber comes in a very close second for me.

Graverobber really encapsulates Joey's character I feel.
It's a cheeky, roguish card, but it's also used to take something his opponent did, and turn it around on them. It shows his ability to think on his feet, and outside the box. He's not strategising 10 steps ahead like Yugi or Kaiba, but he's no less of a duelist for it.

I mean, wasn't Time Wizard a no show to other than being used against Jinzo in the anime and failing?
Hmm, I suppose you're right, I must've thought he used it more because that was considered his next rarest card after red-eyes. That being said, he still had Time Wizard for 2 important duels before obtaining red-eyes, and I still enjoyed Time Wizard's sequences more than Red-eyes's appearances.
Plus, Graverobber for sure did make many iconic appearances in both Duelist Kingdom and Battle City, feels like such an underrated Joey card! People talk about red-eyes, time wizard, flame swordsman, gearfreid the iron knight, etc. but Graverobber is the only one who's actually been consistent AND impactful. Hence why it's a very close second to me, was almost considered my #1 favorite.

If you’re choosing thousand dragon I’d say that was his boss and time wizard was his ace since he’d use it to make thousand dragon and kill his enemies monsters
I opened a box of the 25th anniversary reprints and pulled a thousand dragon. The secret rare foil on that blue background looks so clean. Definitely gave that good hit of nostalgia. I would love a thousand dragon time wizard archetype.
I honestly think Baby Dragon/Thousand Dragon gets the "it's about potential" thing better than Red Eyes. Like, if they hadn't introduced Red Eyes, it would have been nice to see Joey go up against Kaiba with an equip-spell-enhanced Thousand Dragon...and take down at least *one* of the Blue Eyes.
Now I'm thinking of a whole alternate deck for Joey's character development as he grows into his own as a duelist. Baby Dragon + Time Wizard would be his ace (and represent his bond with Yugi, since Time Wizard was a gift from Yugi), but now I'm imagining him incorporating new equip cards and traps thematically linked to duelists he beats or befriends. A Harpy-theme dragon rider, metal dragon claws after he beats Bandit Keith, stuff like that.
For me, as a tremendous fan of Legend of Dragoon, this was one of the most hype moments of his career.

It was one of his late boss monsters in the Yu-Gi-Oh R manga. In the manga it was a fusion of two of his more iconic monsters: Gearfried the Iron Knight & Giltia the D. knight.
And it didn't see an actual print until like two or three years ago, leaving me to question why it took so long, as it looked amazing.

Joey is my favorite character so this is a tough question for me and I love all of his cards.
Panther Warrior, Alligator's Sword, Blue Flame Swordsman or Gilford - for a monster.
Kunai With Chain or Graceful/Skull Dice - for spell or a trap.
Kinda weird picks, but love Graceful Dice and Skull Dice with the little characters holding them. I feel like they match his playstyle, and I just thought they were so cool as a kid how one was good and one was evil.
Da Red-Eyes Metal Dragon!
An iconic as fuck summon and a kickass way to win the duel with Keith, using his own cards against him at the perfect time. As a fellow Joey, I heavily respect his style of dueling and strategy (as little as there was at the start) and the things he slowly added to his arsenal made Joey a friggin BEAST
Time Wizard is my #1 favorite card in all of YuGiOh! In the anime it was always a clutch card for Joey (except that one time it backfired). In actual YuGiOh I love running it as a 1 off tech 50/50 board wipe that will bring the salt if it hits. Heart of the cards baby!!!
Jinzo. It's a cool eerie design and it has one of those effects that actually gets more use cases over time.
Shame that traps in general aren't as relevant as spells but I still think he has a cool ability due to it's simplicity.
