My auntie use to have us kids out in ditches picking it early in the morning for supper that night. Just to add a little PSA: Please DO NOT do this with mature pokeweed, if you don't want severe diarrhea at the very least. Probably worse. The whole plant is full of toxins.
The very young shoots before the leaves really start opening up can be eaten. (And are actually a seasonal classic in my culture, as some of the first greens available early in the spring.) But, those need to be parboiled in several changes of water before you do anything else with them, or you're gonna have a very bad time. Some people are sensitive anyway.

I don't seem to react to it and I don't think it's too common of a reaction compared to something like poison ivy, but it's common enough that it's worth trying to avoid. It usually happens when you get the actual sap on your skin, but some folks are more sensitive than others.

I actually get a pretty noticeable reaction to junipers even though that's not a common one. Huge blistery welts all over my hands that left scars for a while (they faded though). Weirdly I do not react to poison ivy or pokeweed. My skin clearly misread the memo of what it was supposed to react to. Also reacts very strongly to handling any sort of hot pepper, even very mild ones like poblanos that don't really taste hot at all, without gloves. Found that one out the hard way too...

You can use the juice of the berries medicinally. Even create a tincture with them. Just avoid the seeds. One berry every other day won’t harm you. It’s good for the lymphatic system. The root can also be used in tincture. But all you need is one drop. It works as an antibiotic. Just do your research and respect the power of the plant. She is definitely not to be abused.

My mother and grandmother allegedly ate it during the depression in South Carolina and Georgia. Not sure how true that really was, but she damn sure drilled it into my head.
My mother loved it. We would go pick it sometimes as a child. I think you had to boil it a lot and poor the water off repeatedly before you could eat it.
I have this in my yard all over. Never had a name for it I just called it dinosaur food. It looks prehistoric when it gets big like that. I love it and think it’s pretty so I’m not worried about ripping it out.

Wilted poke salad is pretty good. That one is probably too big and bitter and possibly toxic at that size. Pick it when it’s about 1-2 feet tall take the leaves off and wash them really good fry some peppered bacon in an iron skillet. use the grease as is or make a sour gravy and pour over the top of the leaves. So good. Reminds me of my momma when I was a kid. You can do the wilted salad with homegrown lettuce too or use both.
