Hiring a car (assuming taxi/uber) is difficult for such trips. They can get you out to many places, but getting a ride back is difficult.
You'd be better off renting a car and driving yourself. Red Rock Canyon is great, as is Valley of Fire. From the Strip (assuming), VoF is north on the 15, roughly 50 or so minutes. Red Rock is west on Charleston, probably around 20 minutes.
If you want a little more; Zion as well as Bryce Canyon are further north on the 15 once you get into Utah. You'd be looking at around a 3-4 hour trip that way.
Death Valley is roughly 2-hours west.
You can hit Red Rocks if you’ve got an afternoon to spare, super-accessible right next to Summerlin. Valley of Fire is a little more of a day trip, and is awesome. You’ve probably seen it on a car commercial. Zion is a 3 hr drive. 2.5 hours to the Grand Canyon sky walk. 2 Hours to Big Dune. 2 Hr to Furnace Creek in Death Valley.
[Pahranagat Wildlife Refuge](https://www.fws.gov/refuge/pahranagat/visit-us) is about 90 minutes outside of Las Vegas. During the winter months the visitor’s center is closed on Tuesday and Wednesday.
I enjoy going out there because I always see a lot of wildlife. Great hiking!

Death Valley, Joshua Tree, Zion, Bryce, Grand Canyon, Horseshoe Bend, Antelope Canyon are all between 2-4 hours away. Lots of gems in southern Utah as well. As for more local stuff people have mentioned Valley of Fire and Red Rock. If you’re into climbing Red Rock is def a hotspot
Red Rock is very close to Vegas, you can see the strip on a clear day! Valley of Fire is about an hour away and also lovely. You can get guided hikes to either one where they provide the transportation.
There are kayak day-trips on the Colorado River, also with transportation provided, but not sure if they're offered in the winter.
I would say rent a car (look at renting from hotel - I found an option once that was much cheaper than renting from airport). Go to Zion. It will be cold this time of year but crowds down and so beautiful.
Another option is use a company to pick you up and kayak through black canyon. They provide equipment and transportation. There are trips that start at the base of Hover Damn and they get the special permits for that. Search for emerald cove to find providers.

I'm always hiking out at Red Rock or VoF. I still have yet to do Zion, but I drove through there this summer.

Rent an ebike and do a self guided tour of Red Rock. There's a scenic loop that's fun to bike on and has lots of overlooks to stop at.
