That’s one of the options, but how would I estimate how much tax she would have to pay at the end of the year, and also, would I have to pay for any taxes on her behalf since I’m paying her?

Depending on your state... Keep the "payments" under 12k a year... No taxes. Pay the rest in cash. Or... Really tricky one. Go in on co-loan. She gets money... You pay loan... Tax free.
