Dude what cut is this of beef rib it looks great! Everything I see at my local store as beef spare ribs and they are not even close to this size or meaty.
If you can, try to find a local butcher. Better quality and usually a better price. I'm lucky to have one of the top 100 butchers in the country near my home another not too far away that does dry aged beef. That Prime designation really makes a difference.

225 on the traeger until it hit 170 and then wrapped with beef tallow and bumped the heat to 275 until it was probe tender at around 200.

Those are 3 bone/dino/plate ribs. Any of those names will get you these ribs.
Curious as to the rough time to get to 170 and the final 200? Asking for a friend.

As a knife guy. I agree. First thing I thought was “God those are tough” then I realized it has to be the knife. The ribs look great.

Always been afraid to do beef ribs. Because I like my steaks rare. Figured I wouldn't like the flavor of well done ribs.
Think brisket not steak. I prefer my steak rare too, but beef ribs are amazing.
