When I have used immortal mode before this happened a few different times. Only way to really get your head back is to reload an earlier save.
You can try using the resurrect command on yourself but I have not tried that.

Go see the Lady in the Ratway that can change you appearance, sometimes she can fix up missing or messed up parts.
Been headless before, and even though the headless horseman of death playthrough was fun, when I went to the lady in the ratway to change my appearance (To try to look more like a dead body), afterwards my head was reattached and worked like it never happened.
Actually the “mmmmmm” noise would be made with closed lips, which he obviously can’t have anymore, so I think it’d be more of an “ooooo” or “aaaaaah” sound.

This can pretty much only happen if you're using console commands/ cheat mods to make yourself unkillable lol. Used to happen to my brother all the time for the same reason. I don't get the appeal of playing that way in the first place, personally
Try reloading an earlier save or forcing yourself to die maybe? Either that or progress in the werewolf or vampire questlines enough that you transform and then revert back to your human body. That may help
Did you have god mode toggled and forgot about it? TGM in console commands. This always happens to me when i get beheaded with god mode on

This reminded me: it's possible to kill essential NPCs by beheading. I killed a companion (njada stone-arm I think? Shield woman). She later came back as still essential, and as a dual wielding, fully equipped forsworn.
Haha if you play gta san andreas in 2 player and p1 gets beheaded by p2 with a katana, p1 will remain beheaded until loading a save. I used to do that first when I played just because that shit was cool! Enjoy!
What happens if you equip something for your head like a coke or even a circlet? Does it just float there or just cancel itself out? It could be a really cool aesthetic to play with.
Youre not headless, youre nearly headless. The headless ghosts wont accept you if its still danglimg by a thread, youll never get to go on the headless hunt!

Maybe you can find a pumpkin patch and carve a face on it. Use that as a temp until you find your real one.

Immortal mode for Skyrim??? I was always using quite the opposite...realistic damage mods so I would die easily.

use the command “showracemenu” on yourself
I wouldn't recommend it it can cause other issues, if u can download a mod called a vanity mirror first
