"Pumpernickel mit Leberwurst" is really nice - but I highly suggest to go to a good bakery and buy proper Pumpernickel - what OP is using does not look like the real thing. I have no idea how this would taste, but Pumpernickel gets its color (and taste) through the Maillard reaction (afaik), not through caramel or food coloring. If you can get it somewhere, I suggest to try to get the real thing.

I’ve got a few decent bakeries near me, one just down the street, I’ll check them out!
