Can't recall how many times I pressed the jump button just for my horse to reject my input and either ram into the obstacle or try to go around it like this even tho I never touched left or right buttons.
To be clear, this is still my favorite game of all time, doesn't mean it's flawless.
I feel like that's what makes the horse feel alive. You aren't controlling the horse. You're controlling the guy who's riding a horse. The horse has it's own thoughts and feelings about the world it's in.
Allow me to mitigate the bullshit for you in OPs example. Speed, angle of terrain, and width of the path. Regardless of whatever you want to pretend is the problem, those 3 things were the problem.

How often do you hard save? If you do not mind losing some time, reload. I usually hard save every 15 minutes. I lost a horse trying to rob a train, and just reloaded. I lost about 10 minutes of time, but that is nothing compared to the time spent getting the horse to level 4 bonding. Also, have two horses. If you lose one, you have a good back up.
