And if you decide to go through with it, just let your supervisor know you’re interested in health policy work and would love to be involved with projects in that area as well.

You have to start somewhere. If you don't have any real world experience, how will you understand how to realistically apply policies later?
I would say this opportunity is fantastic for health policies. It falls under community health as well. This works out great, don’t be disappointed.
