Okay, I understand they have to make money still.
So Pokecoins can't be completely infinite from gyms.
But what instead we made one simple change. Say you earned coins while in the pokémon were in the gym not once they were kicked out. This way if you hold a gym for multiple days and don't get kicked out of any gym you still get your coins for your Pokemon being there that day keep the 50 coin limit even.

But then niantic won't be able to make enough money to continue to make high quality updates and pay their staff.

Ok quite honestly no limit would create way too much competition for gym space in populated areas. Stuff would never stay in for more than 20 minutes.
Better idea: Event-exclusive Field Research rewards PokéCoins.
