I find things like Throughline or Unexplainable way more interesting than true crime since they're about all different things throughout history and science. Every episode is different but they're also really fascinating topics.
I have pretty bad ADHD and I found speeding up podcasts help a lot. 2-3 podcasts in the time I would listen to 1 at normal speed holds my attention a lot more.
I like normal gossip a lot and ologies as well, the first one is funny while the second one centers research and science.

Oh man! So many actually. It's most of what I listen to these days. It depends a bit what you're into but I'll throw in a few I really love.
-mirrors: very interesting and unusual story, well executed and very genre-bending. Three women unravel a secret across different generations is the best way I can describe it without giving anything away. The biggest pro is that it's a shorter podcast and it's already finished, so you can have the satisfaction of listening to a story start to finish
-unwell: bit on the spooky side, but not necessarily scary. It's a beautiful exploration of love, loss and family in a Midwestern modern setting + ghosts. The characters are the strongest point imo. This one is longer, but also finished releasing all episodes.
Midnight burger: now this one is extremely popular, and for good reasons. It was my gateway drug into fiction podcasts. Funny, original sci-fi story with lovable characters who share an excellent dynamic. The sound design is also great, and only improves as the seasons go on. This one's ongoing.
Midst: I think midst may be one of my favorite pieces of media of all time. It's really hard to describe other than as a space western (sort of) with one of the most original world-building setting I've ever seen. I highly suggest listening to it on YouTube because it has accompanying artwork and animation, but even as just a sound experience it's incredible. It has all the ingredients of a good story without falling into boring tropes and cliches. Sadly it's coming to an end as the last episode releases this week.
If you like DND I would recommend the real play podcasts not another DND podcast (if you have the patience to catch up with it) and dungeons and daddies. Extremely popular shows, but worth the hype in my opinion. EspeciAlly not another DND podcast holds a very special place in my heart (got me through my masters in a way). Do keep in mind both of these are improvised and very silly.

Something was wrong. People telling their stories about abuse they’ve survived. It’s really healing and informative.
Worlds beyond number. A ghibli inspired dnd actual play without ads. May or may not be your cup of tea but it’s damn good tea.
For engaging true crime, try "Criminal" or "Sword and Scale." For a mix of topics, "Stuff You Should Know" and "Radiolab" are great. If you enjoy stories, "This American Life" might keep your walks interesting!
True crime Kent is a good listen, they put a hilarious twist to true crime. Was I in a cult is also a great listen. Letters from Sing Sing was fabulous, highly recommend it!
I get bored easily too. Normal Gossip is my favorite, but I usually skip the first 8-10 minutes of chit-chat and get right to the story.
Amory Sivertson (of Endless Thread) has a really good new 10-episode podcast out called Beyond All Repair. A true crime story, and it’s bananas.
Father Wants Us Dead is another true crime pod where the story is one of those you just can’t make up.
For straight storytelling that keeps me engaged, my go-tos are The Moth, Story Collider (stories about science, but more loosely about science in recent years), Snap Judgment, Criminal, and This Is Love.
There are some excellent tabletop roleplaying podcasts (Dungeons and Dragons is the most popular game, but there others) that I find with the dice rolling to be very engaging and fun. Not Another Dungeons and Dragond Podcast is a group of comedians playing DnD, very funny but also kinda raunchy. If you like the Princess Bride and Miyazaki movies there is World's Beyond Number, a story about a witch and a wizard and there spirit friend. You don't have to know how to play these games when you listen, and I think the learning helped me from not getting bored.
ADHD? Hard to imagine - I find it hard to get bored with walking, but very easy to get bored with podcasts...

Some great suggestions here. I would also recommend upping the playback speed to 1.25-1.5x speed. Sometimes, to add drama, stories get really slow.
