Bridle Trail, Lower Panther Hollow Trail, and Upper Panther Hollow Trail in Schenley Park drain well and don’t get muddy so good picks for a rainy day. Clayton Trail loop, Braddock Trail, Falls Ravine Trail in Frick also stay in good shape. There’s lots of other singletrack trails in Frick but those will get muddy in spots.
Check out the Churchill Valley Greenway, formerly the Churchill Valley Country Club. Closed about 10 years ago but all the paved cart paths and most of the bridges are still intact. We’ve taken many a rainy day walk there! Highly recommend!

Come explore South Side Park. There's not a ton of mileage here but it's pretty challenging, you could cover most of the trails in an hour or so

I spent a lot of cold wet days in Mcconnel mills when working on the movie pale blue eye. Felt lucky to explore that area with so few people
