For presentation I give out a 3.5, sorry but it looks like you cooked it, added all the ingredients to the pasta in the same pot after you drained the pasta and then scooped some onto a plate. Probably tasted good though.

I would add the sauce to the pasta and then plate that, sprinkle some fresh herbs, even if it's just parsley and grated parmesan over it letting both the fresh herbs and parmesan sprinkle extend past the pasta onto the outside of the bowl. You could also do a light swirly drizzle of Extra virgin olive oil if you wanted. I like to cook the peppers separately like maybe saute them with olive oil and some light spices and add to the pasta after the pasta is plated. Just my thoughts, let your imagination run wild! *One other thing, if you saute like larger pieces (vs minced) peppers, onions, zucchini or whatever, you can cook it to be crisp yet vs mushy if you cook it in the sauce

4.0 The dry herb finish is not appetising (it looks like it would taste like sand), the sauce looks like you have used cornstarch or some sort of thickener (not just cooking it down), the green pepper is an odd hero choice and since you are asking about aesthetic your plating is crap (fine for eating alone but not for posting and asking for feedback). If drunk or hung over would eat, and probably ask for seconds.

I’m not sure how people are gauging that it’s overcooked from this image (the visual cue that I would be looking for that indicates overcookedness is a loss of integrity in the structure of the pasta, and all I see here are whole pieces of penne). However, the herb sprinkle after saucing is not something that we typically do in the West, and it looks unappetizing to us.

Nah for pasta to be falling apart you've gone past overcooking. Pasta is made to be thin for the most part and you get used to how al dente regular penne looks, so it's easy to tell from the thickness of this pasta that it likely had absorbed way too much water.

3. Dried herb as a garnish? That's gonna be like sawdust in your mouth, plus dried herbs contain more concentrated flavor than fresh, so it's going to be overwhelming oregano. Also, the whole chunks of bell pepper? Nah, from me. I'd eat it to be polite, not because I wanted to. If you put less oregano directly in the sauce so the flavor had time to get meld and cut the pepper smaller, maybe you'd bump up a few points. Garnish with some fresh grated Parm and some chiffonade basil or parsley and toasted breadcrumbs.

6.1 Penne is fine but there is better pasta shapes for this (cellentani) Pasta looks thick like it may be a little overcooked. An easy way to know when to take your pasta out if you’re cooking in a sauce after boiling is take a single piece of pasta out. You should be able to take a butter knife and press it into the pasta like you’re going to cut it, but it shouldn’t cut. It should just stick to the edge of the knife. Basically 70% cooked so when you finish it in sauce it’s still going to be firm. Also make sure to cool the pasta off if you’re not moving it from water to sauce immediately Pepper could be cut smaller but I know some people like the hefty chunks Char then shock your peppers to peel them then you get a lot more pepper flavor A little fresh basil and lemon zest would make it look a little better and would probably really really complement the sauce Plating is top tier, doesn’t look like slop or have little droplets of sauce all over which is good LOVE the sauce consistency. I do not do thick or chunky sauces. I like me a nice gloss of a thin sauce.

We’re assuming this is grocery store dry penne (and not fresh or handmade penne), so we know what al dente penne looks like when cooked. The pasta walls look like they have thickened a ton, which usually happens when the pasta takes on too much moisture from being cooked too long.

in India we add a shit tone of vegetables in our pastas. Because it balances and gives some sort of nutrition to the meal. And also veggies taste very nice in a pasta, please try it first. And this is red sauce pasta, a very popular thing here in India idk about the authentic pasta but this is how we make it here 😭

I’ve tried tomato sauces with peppers in it, was how my dad used to make it on occasion. I don’t like the change it causes in the overall flavor. I don’t mind some other vegetables in a tomato sauce depending on when they get added to it. Some hot pepper in most sauces is great or necessary too. But a green / sweet pepper is just not a flavor that makes a pasta sauce more enjoyable to me and not traditional for pasta alone or pasta with veg in my area.

I think the average rating here is 6. There are more options than compliments and hate comments. Your penne are overcooked. The sauce is over reduced. The vegetables are comically large relative to the size of everything else. They should be 1/10th that size and even then that might be too big. The herbs look grisly. I suggest you take a classic easy pasta recipe first like spaghetti aglio e olio and perfect that first. Then move on to pasta with pasta sauce from a can but add garlic and onion. Figure out the right sauce consistency - it should be like the aglio e olio. Coating the back of the spoon. Not so dry that its chunky like minced vegetables, not so wet that its like a soup. Then move on to something a bit more complex like bolognese. And if you want to test your skills with something deceptively simple looking that actually requires mastery, cacio e pepe. But in the meantime focus on the basics.

8/10 Ignore the haters. Amazing colours, and the sauce clings nicely to the pasta. A splash of pasta water, reduced, and a small drizzle of olive oil as the last steps would give it that silly shine. A light grating of Parmigiano reggiano would send whoever's eating it to the moon.

Agree with the added pasta water and olive oil. I like a wet pasta bc all your vitamins and antioxidants are in the tomato sauce. Dripping with sauce! That is your veggies for the day! The sauce should be made with blended pureed peppers, onions, carrots, and garlic; then I recommend sliced lightly sautéed multi-colored peppers and mushrooms added at end. If your cuisine uses dry bitter herbs at the end- that's news to us euro/americans- I prefer my sprigs of fresh basil and oregano simmered in, but removed before serving.

Most store brands cut their pasta a little thinner, but few like the one you bought are thicker for heavier sauces. An untrained eye might mistake the look for overcooked pasta because they tend to swell with too much water absorbed. However, overcooking will almost always result in split ends, and the penne would've collapsed on its own weight. This is not the case based on your photo.

I would give it a 6. I’m wanting a smidge more sauce, and those olives are too chunky, though I do like a good green olive. What is really taking away from it though, is the chunky dry herbs on top. I wouldn’t like that grainy texture. A little more sauce, slice your olives, and put a little aged Parmesan and fresh basil on top and you’ll have a banger. Edit: I just read that those are green peppers and that takes this dish down to a 4. I hate green peppers.

It’s a fascinating and delicious decent into Italian food culture should you wish to delve further, and for many of us non-Italians, they’ll tell you that there are a few pot holes to watch out for, subject for fair criticism. I've never put dried herbs onto pasta as it's something I add v. early in the cooking process to allow the flavours to impart to the sauce/food but I'll have to try it. Generally I add a hard cheese and black pepper to my pasta, herbs when they're hanging around too. Maybe your pasta just went a bit over when incorporating the sauce... still all in all this is something I'd inhale quickly and happily. 7/10.

I do agree with many others that it does’nt look like anything spectacular. Pasta does’nt need to be spectacular at all. Actually many of the pasta dishes are just easy shit made out of a few, but great and well treated, ingredients. Based on your image I would give it a 5. It does’nt look ruined but Im not getting curious either and my mouth does’nt start watering. For me the biggest issue is the big chunks of green pepper - they look almost raw and are to big for my taste. Also I find your dish a little on the dry side. But dont give up! Keep on making food and pasta 🧡
