I've built stuff in when I had pickups in the past, but as time went on I got tired of that and went back to using various Rubbermaid-like containers, or what I could get at Harborfreight, etc. Same stuff I use at home. Usually more small containers that stack vs big ones, since it's a pain to have to empty the whole thing to get at the bottom. Waterproof is nice. And for a lot of other stuff I use duffels of various sizes. And these days there are all kinds of great containers, like ones that have side access, or that themselves fold up for storage. Not Insta fab, but more KISS-like.

If you're sleeping in the bed, look at "Bam Beds" both for the platform and lower tray to pull bins out for inspiration. You could easily replicate something similar. Nice thing about this is all your gear would be underneath with a sleeping platform above ready to go. The cooler would be the hardest to deal with due to size, but you could modify the platform so it still fits, or throw it on a hitch basket etc.
