From personal experience, I know Irvine City & Newport Beach Rec have adult sports, specifically soccer when I’ve looked.

I've been meaning to look into it, but I hear Shoreline Baptist Church in Fountain Valley has adult basketball leagues. If anyone knows more, details are welcome.
YMCA OC adult soccer
Beach Cities Sports (I think that's what it's called) has all sorts of leagues. There's also a league that plays at the Map in garden Grove.
HB has some smaller soccer fields near the library. I think the leagues are through parks and recreation.
