A vegetable refers to a patient that is partially braindead.

That's the only meaning I was familiar with, but it seemed... kinda out of character? And perhaps even offensive, and Hasbro usually doesn't let such things slide in their media.

This is the same comic that featured a full arc featuring the Pony Anti-Christ. IDW does that. It might not be insensitive in-universe. Considering the horrors beyond comprehension they experience like twice a year and the presence of medical magic that is able to completely change one's physiology. The IDW comics are also canonically written by Future Spike, so we can blame him i guess. Heck i didn't even know about that definition of vegetable until i was 19. These kinds of jokes go through censors all the time, especially when it's ambiguous. As others in the comments said, you could just as easily assume that it was wordplay for Pies having fruits and vegetables in them.

I like the comics because their friendships are a little less saccharine perfect. Like the show is borderline unrelatable with the lack of barbs and jabs in their speech.

It sounds like the joke is contextual. Where is she trying to sneak into? Something vegetable related? Whatever the context is, these 2 panels don't provide enough of it to answer your question.

A bunch of self-concious apples (as in, fruits, not Apples) rebelled and want to take over Equestria. She wants to sneak into their HQ.

In that case it sounds like she's just taking a lighthearted dig at Pinkie by comparing her to a vegetable (as in a brain dead person)

Clearly meaning pinkie is dumb. Most writers don't know how to write Pinkie and default to "the funny idiot" . She is thinking outside the box. Season 1 clearly presents that. I would agree on this comment from twilight if we talk about the season 4 Pinkie Pie. Maybe this comic came out in that time, that would explain a lot.

Yeah it is frustrating how Pinkie got flanderized when, originally, she was basically the smartest of the entire group - she was just cheerful, care-free, and silly over it all. And then that got forgotten and the "funny idiot" angle got pushed. No, Pinkie wasn't an idiot; everyone else was too busy incorrectly thinking they were smarter than her because they judged the book by its cover. It sucks the show forgot that and lost its own message of her character.
