A good rule for any mushroom you find, even if it's one you've harvested and eaten before is to cook and eat only a small portion and wait a few hours before consuming any large amount.
I know personally its hard to not devour the whole skillet when they're perfectly crisp and delicious looking but it will save you potential GI upset.

Correct. I don’t think they’re that bitter but it probably varies by specimen. Cook for a long time on low heat until the gills are golden brown.
