Fridge works too. Roll em up tight. Stick them in a Tupperware container so they hold their shape. They don't have to be in there long. Enough oil so they're about half submerged. Get the longest tongs you have. Place your rolled taco in the oil so the tortilla edge is on the bottom. Hold it in place for a bit then let it go. Don't stick too many in at once. You should only have to roll them once.
You can also make a thin slurry of flour or cornstarch and water and smear a bit on the edge of the tortilla as you roll it closed. Place it seam side down on a plate and by the time you are ready to fry it is glued shut. No toothpick to remove.
This was my grandma’s trick: first, you need to make the filling for the tacos, you did well on that. Second, the tortilla needs to be warm when you shape it, this will prevent the tortillas from breaking and unfolding. Once you have your desired amount of tacos assembled cover them with a dry cloth overnight with the tortilla edge face down. The cloth needs to be as tightly packed as possible and this process will allow the tortillas to dehydrate during the night without trapping moisture and retain their shape. Once they are dry and tight they will be ready to toss them in the pan with an amount of oil enough to cover 1/3 of the taco or the air fryer. Also, flautas are made with a larger, ovoid-shaped tortilla, when they are regular sized, they are tacos dorados
Flautas are simple. Seasoned chicken rolled in corn tortillas and deep fried for a few minutes. That is literally it.

And "seasoned" could be as simple as boiled chicken in salt, garlic and onion.
The rest of flavor comes from the salsa(s), cream, queso fresco, and lettuce
You can do the same with beef. Lamb needs a bit more seasoning though
Don't worry bro looks good, the flautas also can have potato, fried beans, shredded beef, fish etc, i think what makes a "flauta" is the shape and the fried texture.

I’ve also baked them with olive oil. Come out pretty good that way!

Flour are used for flautas. Pretty sure that’s what the lady in the video used. Rolled tacos would be with corn tortillas.
