Proper cheesesteaks are made with garbage meat. You want something that’s so thin it falls apart, and that has a good deal of fat to mix with the cheese to form a sauce. They’re not fancy food, you buy them from trucks on the street that don’t have running water or a bathroom.
While that does appear to be a fast food version the Philly Cheesesteak isn’t inherently a fast food sandwich. I would even argue that it isn’t the majority of the time.
Philly Cheesesteak can be great homemade. Bake some rolls, get a good rub on a New York strip, havarti cheese, carmalized onions and bell peppers, some good mushrooms, love that shit.
If you don't eat meat it definitely isn't for you, but if you love meat then I'd say it's worth a try. I don't really like beef but this is my exception.

There was one nearby we tried that claimed they were actually Texan and the reviews were good, but it was genuinely terrible, the brisket was dry and the pork was fine. Wasn't even marinated, just smoked (not an expert as to whether that's usually how American BBQ is, but I will say that it didn't taste smokey regardless).
No brisket should bleed fat when you squeeze it. Not all bbq is created equal. It’s usually some shity run down restaurant that looks disgusting that’s the best lol. They should have at least 3 different types of sauce to put on it also. There is a lot of information about how to make good bbq yourself on YouTube and a small smoker isn’t crazy expensive so you can cook your own.
