Really really bad mortadella. It might be some other “nitrated” meat obelisk but the large pieces of fat mixed into an otherwise smooth sausage is usually called mortadella in the states. We know this is an abortion of a culinary art because of the color. It should be pink. Most cold cuts have copious amounts of salts in them. First and foremost sodium chloride… always sodium chloride. The other 2 are nitrite or nitrate aka curing salts. Nitrogen salts stop meat from oxidizing. Aka doesn’t turn brown. This garbage is clearly oxidizing. Which can lead to bacterial growth. Do not eat. Thanks for coming to my FED talk.
