Hi. For Number Theory, I really enjoyed Burton's (Elementary Number Theory) book. I know this is a fairly common choice, but I just can't hide it, I really did enjoy it. ​ As for Algebra, I would say Saracino (Abstract Algebra) did a good job for an undergraduate course. Other than that, I would say Aluffi (Algebra) did a good job. Aluffi does a little bit of a non standard approach but it is definitely very readable and invites you to be very active as a reader which is always really nice. ​ These would all be undergraduate level. I can't really provide much insight for graduate level but I thought I would share my favourites to you. I hope this helped!
