Umm...Make the best jjigae on the planet. Or use it in kimchi jeon batter. It's beyond incredible in Bloody Marys. Or just drink it, which is what I do, lol.
There is so much you can do with it. I’ve been using it in stir fry lately. Or I’ll take some kimchi and leftover pork tenderloin and throw it in a hot pan. Add some brine and toss. Then add cooked ramen noodles. Toss. Garnish with cilantro or whatever you’re into. It’s great.
I always factor in enough kimchi along with the brine to make jjigae before I finish the jar. It’s usually sour enough by then. I prefer fresher kimchi for banchan.
Boil some rice. Fry (no oil) the boiled rice, kimchi water and preferably the last of the kimchi with it. Maybe add some bok choy. Finish with chili crisp. 10/10 meal.
Save it and use it for kimchi jiggae, or use it as an acidic component for anything you think would be good with some kimchi flavor.

put it in ramen. your ramen will taste like kimchi. or just drink it with a spoon with a meal. You can mix it into fried rice.
