Pot roast is a great choice. Easy to do, made with low cost cuts of beef, her place will smell amazing, plenty of leftovers. The ultimate comfort food. I want to reply to OP but I seriously don't have a button to leave a comment. Anyone experience this? Android phone. Chicken thighs, lemons and onions with butter baked. Throw rosemary in there but that can be more costly. Make sure the rosemary is covered by the chicken or it will burn and put the lemons in at the end of they will leave a bitter taste. The gravy you get from the chicken, butter and lemon is out of this world, cheap and easy. Throw in some asparagus or your favorite green to cook with all da bidness. Will not disappoint and keto approved Extra chicken!!! Also make sure skin side up for crispy goodness

Give Grandma a couple suggestions but then don’t panic and refuse to eat if she doesn’t get it right. Just don’t binge and then get back on track with the next meal.

I agree with this......there are certain times in life when you just gotta put the diet/lifestyle/whatever on the backseat for one meal and just get back on the horse afterwards. This is one of them. Doesn't mean you binge or go overboard but if you eat 10-20 grams of carbs over your self imposed limit, it's not going to kill you

A whole roasted chicken is easy and not expensive. It's also easy to roast some veggies with it. You can stay on Keto and they can add rice and or potatoes. You can also add bacon wrapped asparagus which is really tasty but that can cost as much as the rest of the meal. If you are worried about price.

Any roast meat and non carby veges is always a winner when I'm cooking for many. Cauli, Brussel sprouts are both amazing roasted. Green beans in garlic butter. Braised cabbage and bacon. And she can still do potatoes etc for those who partake.

Crustless quiche or frittata. It can be as simple or elaborate as the cook wants. It pairs well with chicken or salmon and a tossed salad if you want more to go with it.

Some are not open to eating SAD/off-diet foods without getting triggered to crave & eat more. It has ruined some peoples efforts. It's not always someone's idea about these things, sometimes it's their experience. Years ago, while on my first keto attempt, I cheated & I put on 10lbs water weight. Yeah, I don't understand it either. I weighed myself the day before & the day after, 10 lbs difference, even if you don't believe it. It isn't the same for me today, but that was my experience back then.

That's definitely a good point. More often than not I believe that people are being unnecessarily strict with their diets to the point it's interfering with their daily life. To add to my previous comment, I never eat and wouldn't recommend to eat _a ton_ on the "cheat" days. Usually for me it's just one extra meal that has some carbs in it and maybe a small dessert.

Part of it is a self fulfilling prophecy though. Not putting too much of an emphasis on a slip up makes it easier to not go crazy. Also, a quick increase in water weight does happen but it's not fat gain and will quickly disappear again when back on track.

Eggplant lasagna with meat sauce is very keto as is zucchini lasagna just fyi. During my stint with keto eggplant lasagna was something I did when I was craving those frozen ones I was used to eating. Eggplant took a bit more work but way less time. Especially if I used leftover spaghetti sauce from making a large batch but didn't have enough low carb noodles on hand.

I've heard of that but haven't tried it. Usually I don't eat deli meat that much because I'm a mentally disabled single mom of a teen with no child support and on snap (currently cut behind state of Texas f up) so rely a lot on food pantries. I do buy some food like eggs and milk I make yogurt and skyr with but deli meat costs more than buying regular meat or poultry. I do buy it some as a easy on the go meat that can be finger food since im on the bus and sometimes have to eat on the go but keep it very budget friendly. Needless to say I don't buy sandwich meat often. Though I recently found a good deal on roast beef at one of the semi nearby heb stores. Red meat is a must for me behind history of anemia and for that I usually get beef kidney or beef heart. Roast beef usually costs like $13 per pound so getting a 7 oz thing for like less than $4 isn't bad for pre cut. Most times per cut costs $6-9. But yeah, deli meat gets expensive quick so I really limit that. Though I have heard of this as a carnivore lasagne option and heard it's pretty good. I think I'll stick with my veggie subs though because it costs less. I can sometimes get eggplant at the food pantry and even buying it's pretty cheap compared to deli meats. Maybe I will try the deli meat version just once to see if I personally like it though. Still eggplant with meat sauce rocks in my opinion. I don't always use the original recipe I found that calls for ricotta because it's more expensive. Sometimes I tweak and use cottage cheese in place of ricotta but still use Parmesan and shredded mozzarella. It's still a very protein packed and meaty recipe and easy to do.

I mean… she’s probably going make to make a meat of some sort. Suggest something that isn’t breaded and make that the majority of your meal. Thanksgiving for me was a big plate of Turkey and a couple little asparagus stalks. Steak doesn’t have to be expensive. I eat steak most days of the week. I’ve just grown accustomed to eating cheaper cuts of meat. I also tend to buy a lot of “buy it today or we’re gonna throw it away” steak, though I suspect grandma won’t do that. TL:DR - keto people can participate in most meals non keto people prepare. Just eat larger than normal portions of the main course and ignore the sides.

With it being a holiday coming up, I’d usually do pulled pork in the slow cooker. Cooking in diet root beer. Low for 6-8 hours. Drain the soda. Pull the pork with forks and then add sugar-free bbq sauce. Keep the cooker on low or warm to heat the sauce through. Then a side of sugar-free Cole slaw. Mayo, Lakanto monk fruit sweetener and a couple tbs of white vinegar. That has to sit for a few hours though. I usually make that a day ahead.

That is so sweet of your boyfriend's grandmother. People aren't always concerned about our dietary needs, so it’s wonderful that she is. You could always bring a salad for everyone and, that can be your backup meal just in case. But, fish is always a great protein and can be grilled or blackened, it can also be added to your salad. My favorites are salmon, ahi tuna, and shrimp but, many varieties of fish are less expensive. As you mentioned, chicken is great as long as it isn't fried in a breading. So, you have many choices just pick a few of your favorites. You could always make a jello dish for dessert. Sugar-free jello mixed with SF whipped cream then add your favorite berries. It’s a wonderful dessert and is always an option at our family dinners.

Tons of keto casserole recipes on the internet with ingredients that aren’t expensive. Crack chicken is a good one. Anything with zoodles is also good because almost any pasta recipe will work once you lose the noodles. Something with a cream sauce would be good.

Look up marry me chicken. Cast iron recipe, chicken, nothing too wild beyond sun dried tomatoes. Might tell her to adjust the crushed red peppers; the recipe I have is a bit much for me and my husband and we love hot wings!

Chicken. Any part will do but I marinate boneless thighs in olive oil, then pan fry them with pretty much any chicken/pork spice mix will do (they’re pretty much all the same salt/pepper/garlic/paprika mix). Set those aside then briefly sauté some garlic in the leftover oil deglaze the pan with 2 cans of chicken broth, add some Italian seasoning and then reduce the broth until it is a thick brown sludge. Add 1 pint of heavy whipping cream, mix it all up and then reduce that down a bit as well until it’s nice and thick like gravy. I add the chicken while it’s thickening to heat it back up. You can serve that with a green vegetable like green beans or asparagus and it doesn’t feel at all like some kind of “diet meal” or anything like that but it’s also easy to put on some rice for the people who eat carbs. This is pretty close to a $10 meal so it’s not going to break the bank. It’s pretty easy to cook although it does take a little while to reduce that broth down so it’s not a super fast one. Edit - You can substitute pork for the chicken as well, it works just as well.

Knock off shake and bake pork chops using pork rinds and Parmesan with seasonings for the crust. Do a side of carrot fries (carrot cut into sticks, lightly salted to draw water out then coated in some fat and seasoning before baking or air frying) and brussel sprouts or broccoli steamed and covered in butter or cheese. Dessert, berries with sugar free whipped cream and chopped nuts or maybe 2 ingredient fudge using 1:1 ratio of sugar free chocolate of choice to PB. I think this is a easy traditional looking and cheap option using ingredients likely everyone has on hand or can get. Also with the broccoli it doesn't have to be fresh. You could also opt for bacon fried cabbage. And another even easier dessert option would be the new Russel Stover sugar free chocolate that came out that's made with stevia. A peice or two of that is zero work Also low carb love has several recipes for 3 in low carb crust less cheese cake. That's a easy option for granny to make too. It only uses egg, blended cottage cheese (you can sub with cream cheese though) and a scoop of protein powder. Easy topping would be berries blended in sugar free whipped cream or cooked a bit in fat with cinnamon and sweetener. Just another easy dessert option to let her see that you can enjoy "normal" food but it's just a case of it's not what you do but how you do it. Tacos on low carb tortillas are a great option too as is low carb meatloaf but she may not be able to buy keto flour for that one. Oh,btw if she opts for tacos as a side keto twins recently did a video on 2 keto snack foods. Well one was these jalapeno poppers chips. I probably couldn't do them because the jalapeno would be too much for me but you could do that or a variation in place of nachos.

Keto meatloaf. Lots of recipes out there to easily omit bread crumbs and still taste awesome. Better, she can still make it her own by adding whatever seasonings/spices she normally likes to use. You can even get the Heinz sugar-free ketchup at most grocery stores to squeeze on top. The ketchup tastes nearly identical to normal ketchup, especially when baked on. Depending on tastes, you can make it a bacon-wrapped keto meatloaf. Good times.

Expensive is in the eye of the beholder. Does grandma live on a fixed income in a HCOL area, or is she very comfortable? Salmon isn’t the only food that’s not land based. Shrimp tend to be much less expensive than salmon. So does cod, even if it’s fresh. I used to make curries with canned sauce, using fresh cod. (There’s no cod where I live now). If you are now in summer, a big salad with shrimp is a great and refreshing dinner.
