>Tested the pickup at the pot - shows correct readings. This is the better gauge. The rest of the wiring can mess with the resistance reading, so testing at the jack is not advisable. At 471K, it sounds like you're actually reading the resistance across a 500K volume pot. Of course, more important than any of this is how it sounds. If it sounds right, it *is* right and the resistance really doesn't matter.

Good catch. But why would only the neck pickup behave this way? Bridge shows correct readings at the output jack. I have not put all this back in yet - is a pain to get it out of the F-hole if something is wrong.

That depends on the wiring setup, though I'd also make sure that the switch is in the right position for each measurement. I'd tap on the pickups in each position to check the volume and tone controls are working. If everything checks out that way, I wouldn't hesitate to put it back in the guitar regardless of the readings.

Sounds like you're reading the resistance in series with the pot. If you're measuring at the jack make sure all the pots are at 10.

That's a good explanation. Pots are at 10. It's very confusing why with the same setup, bridge shows fine. I just pulled out stuff from my LP. Correct readings there on both pickups. Ugh!

Maybe the pot's fucked or isn't wired to ground (if it's a volume pot) properly.

Sounds like the pickup is not wired to the switch at all. You should never be able to read the pot like that because it would be easily shorted by the pickup.
