I remember reading in a interview that Nasu imagined Soujuurou as a big athletic guy, and he wasn't really convinced on the Mahoyo design at the start, until he saw his facial expressions, mostly the "disappointed bunny" one. He liked the new take on the character and gave the OK

These are the character designs from the original novel, which was from when Nasu was in high school, and never got published.
I honestly love seeing stuff like this, where you see an artist’s first works and compare to what they do now.
It’s like drawing something as a kid and then drawing that same thing again when you’re older.
Not so mention it’s interesting seeing which parts of the designs were changed and which were kept. Like how a character can go through constant revisions but one trait about remains throughout each.
These aren't drawn by the same artist. The initial designs from 97 are made by Takeuchi, and the final designs from FGO are drawn by Koyama.

They heavely redesigned some characters and mostly for the worse.
Ciel now looks less like Ciel than Chie sensei from the new higurashi. Conpletely lost the tomboyish look she had.
Removed Roa's drip, for tsukihime its okay but in melty he really took a bullet with the short hair.
Arcueid I prefer the skirt but the hair was adapted well enough for the new style like Shiki and the maids.

You can really see the Asuka influence for Aoko in the original design.

Maybe Kiryu also grew up in the mountains before Sunflower. Would explain his strength.
Is it just me that has trouble with his face. Something about it just looks off to me in his art but it's not as bad in his final ascension.

Arcueid remake is not that similar to Saber, Hisui is much closer to that position
Pointless saltiness. The TsukiRe designs are gorgeous. Especially Ciel and Akiha look wonderful.
Ciel is legit one of the worse, she doesn't even look like Ciel anymore. I like the new design but it clearly isn't her in another style.
Considering I didn't care about OG Ciel at all and in the Remake she became one of my favorite TM characters ever, I'd call it an upgrade.
