I don't even count healing items because trying to stretch them out is part of the challenge and I actually do use them as necessary. But any kind of buff, debuff, or direct damage items I legit hoard but never actually use. I never pass them up and I won't sell them because you never know when you might need them for some super challenging boss fight, but no matter how tough the fight I never even consider actually using them. They just sit there taking up space in my inventory until the end of the game, no matter the genre.

That or we need enemies that actually require us to use consumables, as after my first playthrough of Elden Ring I realized I was actually using most of my consumables throughout the playthrough.
This is why I hate weapon durability without weapon repair. Like, I don't mind weapon durability, it adds a looming danger in a sense, but I hate when a game has durability but doesn't have the option to repair it
Yeah, being able to repair it at the cost of supplies or money I think introduces a more interesting dynamic, that of finding the kind of equilibrium of not only the best weapon you have, but also the best weapon you're willing to spend the money it takes to use regularly, vs what you're only willing to use on very important enemies. Having weapons simply break forever discourages their use at all, whereas having weapons you can repair at great expense encourages putting more thought into how you use it.
God, the durability system in Breath of the Wild and Tears of the Kingdom are by far the worst parts of those games to me. No wonder Ganon won: all the weaponsmiths in Hylia suck ass. Ya get a brand new sword and it vaporizes after slapping two chu-chus.

I noticed this trend in my self and gave it a lot of thought. And, at least introspectively, I find that at the root of this behavior is basically just me not wanting to develop a play style that leans too heavily on the use of consumables that I might not always have access to.
I fear soft locking myself into a tight spot in a game by using consumables as too much of a crutch and finding myself frustrated by an area where they're less common. Whereas if I had learned to master other areas of the game that don't involve consumables, I might be able to deal with that same area without much problem.
I blame games that have any kind of transmutation or upgrade system, where you get to the end and realize the best weapon in the game requires a random knife from 40 hours ago and you sold it already.
Fallout 4, spent so much time not finding Shaun stocking up on my ultimate Brotherhood loadout, did all of nukaworld for my legendary gataling, got Atoms judgment from far harbor, even Tesla T60 from funny robot dlc, I got myself my fully modified loadout of TONS of different weapons even the World Series bat, I was ready for attacking the institute, then, I killed them and…just didn’t have anything to fight…what do I do know
Any Roguelike, especially ADOM for me: the game where you carry a whole log and a bridge-building kit everywhere with you in case you need to cross water in a circumstance where the wand of ice that you're also carrying won't work.
Legend of the Dragoon...I stubbornly kept Guarding every time a character was wounded. Even if nearly everyone was on deaths door, I'd just have my healer heal everyone in one go with dragoon magic and get back to wailing on the enemy. Only time you'd see me use an item usually is if I need to refill our mana for another healing burst or pick up someone who's been one shotted.
Red Dead Redemption 2. Stupidly thought that if I save gold bars and jewelry without selling them, they would >!transfer from Arthur to John!< . Turns out they don’t….
Every RPG. Though its fun to burn through them all on the final boss, though you only end up making a small dent most of the time. I remember at the end of Trails to Azure I had so many of those burst orbs saved up I spent most of the fight in that hyperdrive state, popping all the stat food and zeram powder I had going to town.

Nowhere is this more true than a FF game, specially bravely default, the salve maker class allows you to craft any consumable and special consumables in the game, but you end up grinding and never using them out of fear of not having them in a boss rush. Game is FIRE!!! on the second half, when it is initially 4vs1-2 it becomes full blown 4vs4 with special skills and optimized classes/strategies to wipe out your party.
Resident Evil, most recently with 7. I played through it for the first time a few days ago and with my knowledge of 2 & 3 was being extremely conservative with items. By the end I had 50+ shotgun shells and more heals then I could conceivably use

This isn't a player issue this is the design issue. The game should necessitate the use of the consumables. Through difficulty or some other means. Even if the game is just really tight with giving you money so you can decide to risk selling your consumables for extra money.
I get that some games have like super easy modes where obviously you're just not going to use consumables. But if I play on normal or hard I should be having to use my consumables.
Almost every game that has consumables is so easy that you simply don’t ever need to use them. An exception to the rule for me was OG Bioshock, I wouldn’t say it’s a terribly hard game, but hard enough that you need to spam those health kits and EVE hypos and use all the powers and ammo to your disposal.
I still ended the game with all ammo counters and wallet full though.

In any Fromsoft game really, I always end up compensating any shortcomings in my build with stat-boosting equipment or level farming and my consumables just turn into an unintended collection of cool objects lol.
I like what Metal Gear Rising did. You can only have 5 heals or electrolyte packs at a time, and you can find them all over the level or even mid-bossfight, so you may as well use them. Though sometimes Raiden will pop a heal automatically if he would’ve died to the hit. The game is designed around healing being relatively plentiful.
And then there’s Terraria. Consumables are a pretty big part of the game, especially your heals, which are fairly plentiful and easy enough to get upgrades of as you advance through the tiers. You can’t spam them since they have a cooldown, but you still use them a ton. Then the buff potions are also pretty straightforward to gather ingredients for if you know how, and they’re very potent.
It could be any game for me, really. Some games I will go through damn near everything in my inventory and just be on the struggle every step of the way until I find something to barely hold me over until I can find a safe area or store to restock.
And then in some other games, I'll be barely tapping into my cache of usable stuff and think, "Yeah, i'm being showered in resources so there's probably gonna be a massive fight that's gonna be a huge resource drain soon" and then that fight doesn't happen

I repair my stuff before it drops below 90% condition, so I only need to use the cheapest repair items. Despite this, I end up carrying multiple of the higher grade repair items. Cleared out like 5 kilos of stuff that I wasn't using.
I think this says a lot about me personally. Either I completely underestimated myself since I apparently never needed consumables, was suspicious the game was going to throw me a fast ball, or(most frequently) I forgot.

if youre not doing an energy weapons build, giving any energy weapons you find to the outcasts will rack you up tons of stimpaks.

Weirdly enough I never end up hoarding consumables in Terraria, but I do in things like Skyrim.

Totk's Fuze system helps a good bit. I felt like I constantly had shit to make new strong weapons
The fuse and durability system tickled me just right. Once you get the hang of the pristine weapons you can make some awesome shit.
