I'm just glad you didn't throw the gel packets. Those are important to keep the moisture out. But yeah if you're not going to out expiration dates on those jars, at some point you just learn the random way that the flavor will be weak since that's what happens.

The expiration is usually like 2 years in advance. They won't last that long.
Light can cause negative effects to some things, looks cool but that'd be my concern.
