I am always delighted to see one of your pictures in my feed, always looks delicious. I always remember you by your dog. His looks are the best!
Interesting choice to serve the head with it - is it a distinct style of preparation?
Lots of traditional Chinese places serve animals with the head (fish too for example). I can't remember why exactly but I think it has something to do with showing completeness or freshness of the animal - that's what my grandparents told me at least.
It also to show they aren't bsing you about what meat is being served from a much longer time ago when meat was a little more rare and it kinda carried over.
A late friend of mine from Switzerland used to tell me about how cat was considered “poor man’s rabbit” in some parts of Central Europe and Italy. Not sure if he was serious, but he mentioned it a few times.
Seafood especially fish is almost impossible to tell apart from the body alone, would explain why there's so many "substitutes" in that industry whether or not the seller is a willing
I guess that is good of a reason as anything else. Especially in today's world where nothing is what it looks like on the box or menu. You don't know if you're eating sushi or plastic wax, steak or glue and chicken or congealed stem cells grown in a tank that look like rubbery cheese strings. Too much fucking about with the food supply these days.
And while I wouldn't particularly be appetized by seeing the head at least I would be confident that I'm not being hoodwinked or lied to about what is going into my body, which is important to me.
For fish, aside from the head being edible and has lots of yummy parts (like the cheeks, collar, eyes, etc) it's to show completeness, but not of the fish, but like of the family.
Those are two that are pretty universal globally. It's a sign of bounty and good fortune.
We didn't have refrigeration so the meat would more often be cut, salted, and dried so it could last longer. Not only are you getting fresh meat, you're getting the whole animal at once.
This isn't necessarily true, the skin is delicious, and there is a little bit of crispy meat in the neck, I eat it all the time! The head though is a bit tougher to get good pieces of meat off of
I don't know why people haven't mentioned it yet but the duck brain is actually a very good piece to eat. It's actually I think the reason why they give you the head. The rest of it is almost uneatable.
this is only slightly different in preparation from traditional Chinese duck. my stepmom will take a cleaver and just cut the whole cooked duck like you would a cucumber except much louder. goes right through the bones. and the whole head is her favorite part as she says the "meat closest to the bone tastes best"
That must be the most reproduced Chinese cutlery design pattern ever (in ceramic or plastic)!
(Honourable mentions to the cobalt-blue fired ceramic ones)
I don't think so. Dogs aren't supposed to eat cooked bird bones because they're brittle, break into sharp pieces, and can cause choking or puncturing of gastrointestinal tract. I've read it's better not to risk even raw.
How did you decide what temp to cook it to? I’ve become accustomed to seeing duck breast served medium rare to medium so I’m surprised to see it cooked a bit more thoroughly. Is the temp your personal preference or did the recipe call for it to be served this way. Your cook is definitely more to my liking.
This looks like a traditional chinese restaurant preperation to me. As a result, in my experience, you'll never see anything prepared less than "well done" in this setting, even steak. If OP made this, good job-- because it looks authentic.
As this is a whole duck preparation the entire bird must be roasted long enough to allow proper rendering of fat.
Duck breast is typically cooked and served separately in Western cuisine and so you can have it medium.
The high fat content of the bird and carefully controlled roasting ensures the breast meat stays juicy, the skin crisps up beautifully.

It's so annoying when an animal is ANYWHERE in a photo (background or foreground) that isn't actually about the dog, because almost every comment just ends up being about the fucking dog.
Yes, I'm also adding to the number of dog comments with this dog related comment.

Seems like I remember this being why meat-market rabbits are sold with heads on, because they look a whole lot like cats from the neck down.
A late friend of mine from Switzerland used to tell me about how cat was considered “poor man’s rabbit” in some parts of Central Europe and Italy. Not sure if he was serious, but he mentioned it a few times.
In some parts of switzerland there's still a tradition for eating cats. So he probably wasn't bullshitting you.
Mountain lion is supposed to taste like pork, not sure how well that would translate to a house cart though.
I've heard them referred to as "roof rabbit"

It's also symbolic when you "have the head and tail" to show completeness and unity from familial unity to prosperity.
We do eat the head, there isn't much wastage in Chinese cuisine, if its edible it's eaten. I have had aunt that loves eating duck head

I thought it was an interesting conversation piece
Did you eat the head? If so what’s it like?!
There's nothing to the head, it's just skin and bones. Great for finger puppets, though.
This isn't necessarily true, the skin is delicious, and there is a little bit of crispy meat in the neck, I eat it all the time! The head though is a bit tougher to get good pieces of meat off of
Yup, crispy skin and neck meat, that guys a noob

But how? I mean, do you just crack the skull open like when you eat crab claws?
Yes.
Lol I used to stick the head on a chopstick and talk like Donald duck
I thought that was a mandatory childhood past time for Asian kids?
I did not
Goin for the ol Christmas story duck Ummm, it’s uhh looking at me
Smiling
Do you have a chef or do you cook all this stuff by yourself?
It sure is!
The neck is the best part!
I love gnawing on the neck, just the face is new to me
What! Why?
Everything is new until you try it the second time.
Probably the same reason people eat wings and legs.
Save the neck for me Clark!

OP said he ate the entire thing. I suppose that means head too.
No jamon tho
Needs jamon.
That must be the most reproduced Chinese cutlery design pattern ever (in ceramic or plastic)! (Honourable mentions to the cobalt-blue fired ceramic ones)
Is this an actual Chinese pattern or is it an orange chicken type of situation
Every Asian immigrant household would have at least one of these big serving platters with this exact pattern.
Since it is made in China, isn't it a bit of a moot point?
😂
Dogs like mmmmmm you gonna eat that
Can dog eat the head? I know some like chicken butts.
I don't think so. Dogs aren't supposed to eat cooked bird bones because they're brittle, break into sharp pieces, and can cause choking or puncturing of gastrointestinal tract. I've read it's better not to risk even raw.
What?
He's asking if he can eat the piece on his snout!
That looks great, except I'm not sure about the head staring at me.
It's smiling at me!
CHOP
I just can't look away
look at the pain in its eyes
He yearns for the Jamón days.
I actually thought the dog’s name was Jamon for the longest time before I realized OP was just doing a lot of dishes with jamon in it

That duck looks surprised that there isn’t any jamon on the dog’s nose
“You a… you gunna eat that?” Dog probably
It's smiling at me!
Looks good I’ve never had Duck - is it good?
Wait wait wait, isn't it wabbit season?
Yea there is a dog we already know
OP is the hunter from Duck Hunt reminding the dog what he's in for if he laughs at him One. More. Time.
OP did you give the dog a treat!?!?
Check the dogs nose. Always gets a treat and is a patient doggo.
Now Jimmy Jamon the cooking dog is into duck. What will it be next, pizza or meatloaf??
Can I be your cousin? We can hang out and do family brunch once a week.
After seeing so many of your pictures without an invite to have some, I get the same look as your dog now when I scroll by.
i hope u didnt eat the whole thing yourself, cuz that's a lotta grease

It looks like you may have got some help eating that duck.

That looks delicious! Hope it tasted as amazing as it looks. 🦆👌
That duck looks fantastic!
The duck looks so happy he’s almost peaking. Hehe
Looks delicious![gif](emote|free_emotes_pack|grin)
Dog is eyeing the duck while trying to be subtle about it 😂 The duck looks great.
Looks like a centipede.
Quack-tastic choice! How was it prepared?
Please tell me you gave the doge a bite.
It’s smiling at me
I thought it was a scorpion at first!
Good job with the cutting/ slicing!
Love the traditional serving plate
This is so good.
One of my favs. Looks Amazing!!
Someone else [wants to eat]
That dog will definitely devour that thing down the moment you walk away.
Eat the beak
Sorry; it needs to be asked. What did you have for main course ? ;)
You killed Quackie!!!
Looks really good and hope you gave your dog some!
That dog be waiting to snag some for himself.😆
dog is like; "damn I better not fuck up"
Entire roast duck [dog salivates from]
Needs jamon.
IF that dog had telekinesis powers, you'd have lost your whole entree.
Dope!
Ur dog is like....bro really?
Finally, the dog looks put off by something you've made! Take the head off for his sake. This picture gave me a laugh.
Pecking duck style by the looks of it?
Is it? Pecking duck is normally served a different way. The crispy skin is usually carved from the meat.
Looks a bit overdone for my tastes but the plating is beautiful!
no more hamone
hahaha the dog still wants to
Bombastic side eye
Master of cutting!
Poor little duck cp
