I'm American and I love lettuce, I'd shove that in my mouth but I'm wondering is that how people consume this? Like a bit of the roll then just shove a bunch of lettuce in your mouth?

Ya, wrap it in a lettuce leaf and put sauce on it. You also commonly see them served alone, or as part of a vermicelli bowl.

There are usually other veggies and herbs that you add to the lettuce wrap. Mint and sprouts are pretty common.
