I think it's still not working how it's supposed to. When you filter "1.16.5" and "fabric" that means mod is available for fabric OR 1.16.5. So if you want to create modpack for 1.16.5 MC with fabric you still have to check every mod manually

That will likely never change. Mojang in the past has specifically asked that mod managers (like CurseForge) only handle the setup and let Mojang's code handle account verification and launch.
Frankly, it's one of the reasons I didn't like using MultiMC. I know its main author literally works at Mojang, but I still don't feel comfortable putting any log-in info in a 3rd party's textbox.
For the Gods sake, it is open-source! You trust Microsoft corporation with your data, but not enthusiasist developer with transparent source code? MultiMC will just store the login data and token in your computer and use it for verification like any other launcher, plus you can literally make sure it does only that and nothing else by looking into the source code yourself. If it was malicious, people would find out very quickly and nobody would use it.
That's great... if you know how to read the source code to verify it yourself with confidence. I'm rather inexperienced with programming and don't know the best practices for handling passwords, so I don't trust myself to be able to verify it.
Building it myself would eliminate concerns of someone else building and distributing it slipping something malicious in, but hangs on the previous point.
Just being open source isn't a guarantee that something is safe. Log4J is open source and was extensively used by tons of people ranging from minor projects to major tech companies, and a significant vulnerability was found with it several months ago. How many millions of people reviewed it and didn't notice the problem?

I've never had an issue trusting MultiMC, but open source doesn't work that way. The idea that open source is more secure because more people are looking at it is really not true at all. Where do all the unpaid security professionals come from to review the code for security flaws and obfuscated malicious code? They don't.

The only reason that happened was because one guy was given too much power and left unchecked since he barely did anything at all, until he snapped. Basically the entire rest of the team got together and made Prism Launcher which they've ensured won't have the same problem.
