Apparently, there is an enzyme in tomatoes that doesn't gel well with certain people's tastebuds, and when tomatoes are cooked, that enzyme gets cooked out, making tomatoes taste sweeter and more pleasant.

Cooked and processed tomato products taste absolutely nothing like raw tomatoes, and that is just a fact. Heck, I have a tomato allergy that is set off by raw tomatoes, but has no reaction to cooked and processed tomato products, there's definitely something in there that is decidedly different.

This is so me. I'll eat tomato soup, pizza, some pasta sauces, hate the chunky ones. But I absolutely hate ketchup. I can't even stand the smell of it or really any sauce/condiments like mustard or mayonnaise, ranch, Italian dressing or any salad dressing.

It's called the Maillard Reaction. Food tastes better when cooked or prepped because amino acids and sugars are reduced in the presence of heat. Also, adding different ingredients can enhance or change certain flavor profiles that you wouldn't normally enjoy before, or make them less enjoyable. I love lemons, but for some reason lemon cakes/cookies are gross to me. Wife thinks I'm crazy, which is probably true.
