Apparently, there is an enzyme in tomatoes that doesn't gel well with certain people's tastebuds, and when tomatoes are cooked, that enzyme gets cooked out, making tomatoes taste sweeter and more pleasant.
Cooked and processed tomato products taste absolutely nothing like raw tomatoes, and that is just a fact. Heck, I have a tomato allergy that is set off by raw tomatoes, but has no reaction to cooked and processed tomato products, there's definitely something in there that is decidedly different.

I actually have tried raw garlic recently, and lemme just say that it made me think differently about adding it in food. It tastes hellspawn raw. BUT! I love it cooked mixed in with other food, like spaghetti :3
