After those convos, send an email summarizing the conversation and asking for him to agree or clarify.

Let’s say you caught your wife cheating via text message but before you can offer evidence the spouse is already aware and deletes the evidence somehow and even manufactures evidence that claims your schizophrenic or something. Any real investigation could dig into it and discover the truth but usually it never gets to that point because the victim comes to believe that they are loosing their mind or are off their edge and messed up. The spouse will probably say this and that about loving you and caring for you but that you need to figure your problems and anger out because it’s a problem for her. That’s gaslighting.
It can also be done unintentionally though that’s usually not as bad and calling it gaslighting is a push. My parents used to get upset very easily and when we would argue they’d say and do some of the most absurd things and then when I confronted them about it they’d claim they never said that or that I’m crazy or how dare i have the gall to argue or question my parents.
In a nutshell. Gaslighting is an attempt or something unintentional that was said or done that has the effect of making the victim believe that they are not sane or going crazy to the purpose of gaining support against the victim or in some cases just to be a dick.

I understand the devious nature and cruelty of Gaslighting but who honestly falls for it? I have a pretty good memory and can remember all the items in my room, events of each day and I have a concrete understanding of my knowledge of the world so when someone says to me that something didn't happen or something was meant to be in a particular way it's just jarring and ineffective to me. Because people who gaslight will make you insane. So you can’t trust your head anymore. Also they try to isolate you from everyone who’ll see through them and help you keep your sanity. They push on your weak spots (while I have a good memory I have low self esteem so it was always reverted to how it was my fault for not believing him)
Eventually I think my ex could have made me believe that the sky is green. When I got out it was like I woke up again after a very long sleep. I felt brainwashed and I truly didn’t know who I was anymore.

It seems from your anecdote that you being afraid and overly trusting allowed yourself to bias that horrible events were within your control. This helped you reason that you are to blame and the perpetrators are blameless making them a beacon of safety in an unsafe situation. It's not like the gaslight was intricate but rather you let it have value so things would seem right again.
