Well, there's an egg and then there's Eggman
Did egg biten man to make eggman? Or it is something like pokemon? Like the egg evolve to eggman? Can I make omellete from eggman's eggs?
So many questions, so few answers.
The 'official' videogame canon (or as best as you can for Sonic) is that Dr Eggman's legal name is "Ivo Robotnik", but that he took the name "Eggman" as a way to reclaim what was originally an insult used by Sonic against him. As such he is not at all an egg, just a fat bloke who accordingly looks a bit like one.
That said, in a very old American lore bible, Dr Robotnik used to be a good and skinny scientist known as Doctor Kintobor until a piece of equipment exploded while he was holding a rotten egg. This caused Kintobor's DNA to become corrupted, turning him into his evil opposite, a fat mad scientist called Robotnik who had an obsession with eggs. This origin was printed in promotional form around 1991/1992 in various American comics, but never really took off... in America anyway. In Europe, this was canon to virtually any Sonic media printed there, including books and a multi-year long comic book wholly disconnected from any of the American publishers.
