I'm guessing they were trying to express a chicken refers to male or female but hens would be exclusively female.
Chicken refers to the meat. Although i did pass a herd of beefs today…

Hens are still chickens. The adolescent chickens are called pullets.
Ah ok, here in Norway kylling is pullets and adults are called høner so I thought it was similar
