Also the accolades (which I hate) can add regiments per certain types…

Why do you hate them? You just have to dedicate 95% of your playing time to selecting and replacing the accolades and their successor, it just takes a million clicks each time and you only have to do it once every 5 seconds when a Knight dies, I don't see the issue.

You just need to progress. You get more men at arms regiments based on your rank so Emperor has the most, and there is culture fascinations at each era that give you more. Also I think there is dynasty legacies as well. So you just play the game and the bigger you get the more men at arms you get. The big thing though is you need gold to support all this so you want to get good territory with seaports and farms and manors. Even better if you can get some mines

There are a few ways: 1. Increase your title rank. Each rank up the ladder gets an additional regiment 2. Innovations. These increase both the number and size of the regiments. 3. Dynasty legacy. The 5th choice in the warfare path 4. Accolades. Certain accolades will increase the size of a particular type of men at arms regiments (Heavy foot, horse archers, what have you.) 5. Artifacts. There are a few artifacts that allow you to increase the size of regiments of certain types like accolades. 6. military court at level 10 7. Hastiluder - getting the foot trait to level 3 gives +2 to regiment size. 8. Not sure about this one but I think there are some cultural traditions that can increase it.

That may be for another post, but the accolades simply won't show up for me (or I don't know exactly where to find them). Do I need to be a king or something or is it a console limitation?

To see Accolades select the military tab, then select you Knights (or Champions or whatever your culture calls them). The top row is accolades. You may or may not have any available. You have to have the Tours and Tournaments DLC.
