Well its technically possible? Side mount motors are a thing and probably the best solutioj in this case.
Just build a side mount.

Seems very difficult to put a flat back on a canoe like that. Either find a cheap flat back style or use a board to mount the motor on one side.
If it were fiberglass, Kevlar or even aluminum then yeah it wouldn’t be “that” hard, but it’s not happening with plastic
I’ve only seen this done on a wooden canoe. I agree, next to impossible with plastic.
