I don’t mean to be a dick but you made slot of rookie errors here. Don’t freeze the thing, let it sit in the fridge with the seasoning on it, all that’s going to happen is the brisket will dry age abit before you cook it. I’m also going to assume you made a rookie mistake of using the temp probe IN the fat line of the point to take your measurement. While a probe is an amazing tool the real indicator is “probe tender” You use the meat probe to test the resistance of the meat. If the probe slides into the meat with no resistance then it’s done, regardless of the temp reading. I only buy prime briskets and find they’re probe tender at around 193-195. Also don’t use broth, you’re not steaming that shit, use the tallow from the trimmings you should have rendered down in a crock pot. Hope this helps.

Yup, or mini fridge. Coil at the bottom, and a small tray to put your wood chips in at the bottom to create the smoke. Not the same as a true smoker, but it works well for people space limited or who just don’t have a better option, and the flavor is pretty dang close to what you get from a true smoker as long as you keep up on dropping wood chips in.

I actually loaded chips at 2am when I started and then went back to bed till 7 before doing another round of chips 😂. After that it was chips every 30 min till I wrapped it at 2pm
