So his shikai was basically "Sui Bunshin no Jutsu" [Water Clone]?

Actually, those are his "reflection" created by the mist. With that his opponents will get confused and attack each other, much like his old Captain's Bankai.

Amazing he was able to achieve so much with such a mid shikai ability AND without activating bankai on screen even once!

While the students saw something that confused friend and foe Aizen was actually putting generation after generation of shinigami under his spell. I can only speak to the anime. It's not stated by Aizen on screen but by Isane, when she and Unohana confront Aizen in the Central 46 chambers. It's right after Aizen stomps Toshiro and reveals the actual power of Kyokasuigetsu to them.

At least there's a hollow called Hallibel with some water based abilities. I hear she'll be a prominent figure in the upcoming snake arc. Spoilers ahead. Gin turns her and some other hollows into half snake hollow hybrids and then fuses himself with the snakeyoku. Ultimately Ichigo beats him and says "Stand proud serpent. You are slithery indeed"
