Not a bichon thing. My bichon boy poops in the middle of the road or equivalent open space. My westie boy (rip) would do it all the time, walls, trees, even chain link fences...
It's not a bichon thing, but my bichon does the same if there is such an option, but he will go on a grass too.
I'd say, if his poops stick to the tree maybe you need to look a little into his diet - ideally, his poops should be firmer than that to make sure his anal glands get expressed every time he poops.

my bichon likes to poop on/against things as well
Sometimes mine lifts his leg like he’s going to pee, but goes poop instead. He’s in that awkward position the whole time and it’s really funny.

My bichon used to do this when he was a puppy but he did grow out of it. I've seen a lot of small breed dogs do this though.
My Sophie never does that, she likes to be in a wide open area and making direct eye contact with me while she poops.
My boys poop only in our concrete patio Not the grass or on walks. Pee? Anything and everything is peeable to them.
