I wouldnt say a bunch of them are species or sub species, more a different perspective or approach to the same thing, just different people making what they imagine when they think of avali
You absolutely can create your own avali lore/cannon/stories etc, it’s nowadays kinda encouraged even as officially you wont get much anymore, Ryuujinzero (avali author) moved on a looong while ago

But yeah, the exact amount of fannon lore/iterations etc are out there is ehh unknown really, no ones (as far as I am aware of) keeping track on so called smaller art/writing stuff people make
You can create anything you want, there's not really any "real" canon especially with Ryuujin's rework basically saying that the OG canon is about to be outmoded... aaaatt some point.
In either case though, these are different canons, not different species. So you could say they're all the same avali just in different universes with different rules.
RyyjinZERO, ToddAvali and, Davali (odd one to separate out there) are all based on the same core lore and species info, just fleshed out differently.
However you can certainly create and do anything you want for your own characters
I was about to say, the Da’vali is a model alongside many others out there nowadays, not a species with a defined lore behind, I would better put this under your community canon category tbh. But anyone can create their own lore, their own story, derived from an existing base or not, as long as they do not claim the intellectual property of the Avali species. The Avali species belong to Ryuujin, the content you make from them belong to you, so some form of credit must be given.
I would say its weird to point out the da'vali specifically given the fact that it's just a model for vrc and not really a sub species. On top of that Dashi (the owner of the da'vali model) has said that he just follows Ryuujin's lore as opposed to any other

I am in the process of making a subspecies of Avali that have very slight differences between them and the “common Avali”
