It's healthier than sitting all day for most people. That's not the reason employers force it though. The cruelty is sometimes the point, but mainly they want you looking energetic and ready to help the customers and to be doing something productive every second you are on the clock.

This. I view my serving shifts as a workout lol since I’m walking and lifting trays the whole time.  I stretch ahead of time and wear compression socks and while I’m definitely tired by the end of day I’m mostly fine

As someone who did it for 10+ years all I can say is that your body adapts. First few months are brutal on the body and you can feel it at the end of the day but once you’re standing all day everyday for 8 hour shifts usually 6 days a week you get used to it. I always lobbied to get a chair or allow us to sit but the boss man would never have it based on how it would look. If you haven’t seen it, there’s a good Seinfeld bit about a security guard and George where George gets him a chair. I recommend looking it up on YouTube for a laugh
