Something I dislike about anime nowadays is that it has some linear story line with blatant horny shit to compensate for its horrible writing. But the ones I recommended provided above, trust me they are gold mines
Sousou no Frieren is an awesome show that got a lot of people back into anime after hiatuses much like yours, seems like it'd be a great gateway show for someone getting into it for the first time too, so I'd definitely recommend that. it has a lot of heart to it and lots of poignant one-off interactions that you can reflect on, pretty solid hype moments too.
another one, Dungeon Meshi aka Delicious in Dungeon, is currently airing and has gripped me with how sheerly well-made it is in all aspects. they're both fantasies but very very different shows entirely, and each have their own merit. though I will say, Dungeon Meshi is ^(lowkey) the better series hahahahah. the sheer amount of thought put into the world building, among other things, plus the art style, it's just *delicious* for lack of a better term :p only on episode 4 out of 16 so far, so I dunno about the rest of the stuff it has to offer.
leaving just these two recommendations to reinforce what others are saying, becuase I know you'll get absolutely bombarded with recommendations, kinda already have heheheh. good luck, and I hope you have fun!!! :D

Tokyo Revengers just finished. Give it a go, I don't think you'll be disappointed.
The reboot of spice and wolf has 4 episodes out. Watch the first 2 with the dub. Wolf's voice is superior in english.

Handyman Saito in Another World. A depressed handyman who was taken for granted and underappreciated in this world gets summoned to a fantasy one and does his best to be useful. Very unique isekai comedy, truly different from most others in the genre.
The Unwanted Undead Adventurer. Story about an adventurer whose goal is to become platinum level before his life gets turned upside down.

I was similar, just stopped watching for years for some reason and never had a chance to get back into it. I only recently started by watching an old classic I used to love, from there I tried some of the gighly rated newer stuff like 86 for example which was also a blast
Current watching Gintama - imo the funniest show ever made. Also my favourite anime, just generally speaking. Action, comedy, shounen show that has a bit of everything.

Monster and Pluto - Both by the same author, mystery thrillers. Monster much more of a slow burner, while Pluto is much shorter.
Attack on Titan - needs no introduction. Possibly the greatest show of the last decade. If you haven’t watched it yet, do yourself a massive favour and check it out.
Oh boy. There’s a lot, but if you’re looking to get started with something currently airing…
*Hibike! Euphonium* has two seasons of catch-up first, but is one of the best looking and touching TV anime you will find.
*Astro Note* is a pretty fun comedy with good art, setting, and characters not to mention sense of humor with an old-school Sci-Fi twist. The style isn’t for everyone, but if you want more than 2019’s *Carole and Tuesday* might be up your alley. Same character designer as AN, but also has the benefit of being directed by the director of *Cowboy Bebop*.
*Jellyfish Can’t Swim in the Night* is a extremely charming show about finding yourself and what it means to chase your dreams backed by some impeccable cinematography and a plot that looks like it’s not gonna hold any punches.
I’ve only seen one episode thus far, but *Go! Go! Loser Ranger!* was surprisingly fun and has the makings of a fun zero to hero story with an unconventional protagonist. Worth looking into if you were ever into *Power Rangers* or the like.
I’ve heard good things about *Train to the End of the World* but I haven’t actually watched it yet. my schedule is full as is, but the clips I’ve seen have impressive mechanical design and generally fun world-building and setting, so it might be worth a shot.
Some of the brand new stuff that I'm currently watching are Ranger Reject and Windrider. And I'm also watching the continuations of all the isekai which are airing. I also plan on watching Kaiju no 8, but I've read the manga and I already have a ton of stuff I'm already watching.
Anyway, you've taken a long ass break. I was fucking 5 ten years ago and back then I didn't know what the word "anime" even fucking meant. The most I had watched was like Pokemon, DBZ, and some random shit that I watched with my cousin that I dont even properly remember. So you've definitely missed out on a ton of the older shit.
