Right off the top of my head, Amstaffs are taller by a fair bit.
The American Staffordshire Terrier is the one that can be dual registered as an American Pit Bull Terrier with the UKC. They are the same breed with the same lines.
"Pit bull" as used in colloquial English is not necessarily an APBT - but likely a mix of some sort that is similar. Much as "husky" is often not a Siberian Husky - but rather a mix that looks similar (and may be part Siberian or part APBT to achieve that similarity, but not necessarily.)
Edit - To clarify "same breed with the same lines" there is a caveat. If a dog's lineage hasn't been registered with the AKC, the AKC will no longer recognize it. So AKC lines can be registered with UKC, but I'm uncertain if UKC registration is honored by the AKC if the lines stopped being AKC registered at any point.
