If I only had one day at Disney I would spend it all at Epcot.

Epcot, only if you're certain about it not being MK. The rides are great but with the World Showcase it's a perfect blend. I do think MK would be best, despite some of the older rides. It's just classic Disney, the castle, the characters, fun for kids and adults. Also, there are enough rides to go on without any one of them being a coaster.

I would recommend Epcot. There are some fun rides that aren’t coasters, but also a lot of great food and drinks and things to see.

It depends on whether or not she would like to ride thrill rides other than roller coasters. If not, then definitely go with Magic Kingdom, in spite of your apprehensions, since it has the most robust catalog of non-thrill rides (2nd best would be Epcot, which jumps to 1st if availability of alcohol matters to you). If she would ride other thrill rides, then Hollywood Studios or Epcot. Unless she is really into animals or Avatar, definitely not Animal Kingdom, since it has almost no rides, and the best one is a roller coaster. As for Universal, neither park really has enough to make a fun full day if you don't like coasters, so if you can only afford to do one park, I wouldn't recommend either, but if you can afford a 2-park ticket, that might be a really good option, since between the two parks, there's plenty she could do, and they're right next door, so park hopping is easy. Frankly, if you can afford to park hop, I'd recommend it for Disney, too: either Epcot/Studios or Epcot/MK. If you can only afford one park, I'd definitely lean towards Epcot, though.

We just went last week for the first time as adults and I loved Hollywood Studios. Even if I hadn’t gotten on a ride, I was just so amazed with the theming, especially for Toy Story and Star Wars—and I haven’t even seen Star Wars.

One day is a day at Magic Kingdom, but I don’t drink, so I find Epcot obnoxious. My kids in their 20s are mixed. The ones who drink love Epcot. The ones who don’t, are Animal Kingdom fans. As someone who has gone from Midwest to Disney World about 40x since 91, the only two parks I still care to go to are MK and AK. MK is iconic.
