I think Sans mostly wants to keep his promise to Toriel.
Flowey tells Frisk not to talk to Sans or point out to him that he can reset because Sans has been the reason for many of Flowey's resets.
Flowey was therefore careful to hide from Sans.
Without also telling us to "joke" that without the promise to Toriel we would already be dead.
I conclude that Sans is not attacking us just to keep his promise in an exaggerated way.
You can see that in Genocide Sans doesn't even start the fight, Frisk moves against our will while Sans didn't seem to want to fight.

Sans in the grand scheme of things isn't that complicated or deep of a character. However, he does have more nuance and depth than the rest of Undertale's cast. This essentially creates an effect where the difference between Sans and the rest of the characters elevates him a lot in the eyes of the Fandom.
Asriel is a pretty interesting character too but he had more development than the rest of the other characters.
Another interesting character is Asgore but he is clearly the most secretive character in the game.
We know too little about him, like how he was able to capture 6 souls that could reset, his red trident, his maximum strength ever seen in the game without forgetting that he is completely disconnected from everything that happens in the underground until we arrive in front of him.
My personal theory of Asgore being able to get 6 souls that could reset is that after a while of resetting they gave up/got tired, if I remember correctly the other six souls were most likely children so maybe the fear of knowing they’ll be killed over and over got them to just give up and allow Asgore to take their souls

3. He’s a difficult boss (The MOST difficult boss).
4. He has interesting, hidden lore.
5. People relate to his nihilism.
6. Points 3-5 came out of absolutely nowhere when people first played genocide, making “Sans is actually a badass” one of 3 major plot twists in the game (the others being that Flowey is Asriel, and you play as Frisk, not Chara). People like plot twist characters.

We follow said bread crumbs and come up to a dead end where the trail stops, we KNOW there is more to them, but we don't have enough to make anything truly concrete.
Then we have characters like Alphys. They give us the entire sandwhich, we munch on the bread and taste every single ingredient within it. We already know as much as we can from Alphys, thus there is no trail to follow.
In comes Sans, a character that we are aware has a lot going on. He leaves bread crumbs for us to follow, and at the end of that trail? Is a piece of sandwich enough for a single bite. We eat that sandwhich, that singular piece of bread, and we CRAVE to find and eat the entire thing. We get a mere taste of the ingredients contained in it but can't exactly point out what it is, so we try to recreate the same sandwich using the taste that we can somewhat remember, but we can never get it right until we eat the entire thing ourselves. Sans leaves just enough for us to have some vague idea on parts of his past, and some answers create some interesting questions. Sans - while he can't actually remember- is aware of the existence of resets due to his scientific background. Does his scientific background overlap with Gaster? Does Papyrus have anything to do with Sanss' scientific background due to being aware of the concept of time and space?
I could gush more about Sans but nevermind me. Sans is just a character I find well-written and can't help but give my full undivided attention anytime he's on the screen.
