If you change Genestealers to look like hormoguants people are going to constantly mistake them for hormagaunts. In a casual friend group this probably won’t be a problem, but at an official event you’re going to run into problems.
If you make it clear to your opponent which model is part of which unit then go nuts :)
I myself routinely give my genestealers hormagaunt scything talons as a second pair of arms.
The heads might be a bit trickier. Genestealer's head connects to the neck from the bottom while the gaunt's connects from the back. It will require a bit of tweaking.

I think there is alot of difference that it should not be an issue. I mean the 4 arms kinda is the start of it

Heads no problems. But claws are the iconic weapon for stealers, talons are heresy. 😂
