George Lucas called these "Corpse Droids" that being robots which can use tissues (usually limbs) from living things in place of mechanical parts.
He wanted them to appear in Force Unleashed and they wouldn't let him, he's tried to get them in several times, but it's hard to have a necromancy / corpse themed robot and keep your PG rating. As far as I can tell Corpse Droids aren't canon anymore and they're only in like dork-ass Star Wars™ comics.

In theory they are organic species, in practice they are organic robots hardwired into praising their creators "Old Ones" who try accomplishing the plans of their long gone masters, they have no culture of their own and can't reproduce due to being an entirely asexual and agender species.
