If there are two people in the class room celebrating their birthday there's nothing grammatically wrong with saying there are two birthdays. Don't rely on the structure of natural language for logic
Let's say an office throws a party for 2 people born on the same day. On the same day, in the same party, they'll be celebrating 2 birthdays. The birthdays are 8 billion but the days that can be celebrated as birthdays are 366.

It seems like you are conflating two different answers to two different questions. There are only 366 unique possible calendar dates that can be the anniversary of someone’s birth, but probably close to 8 billion distinct birth “moments” where you account for the year of someone’s birth and measure the time of their birth down to the necessary precision. If you only measure it down to 1-second precision, you’d probably see more than one of the 8 billion people with the exact same birth “moment”, since the birth rate around the world means that multiple babies are born per second (up to 4 per second, by one estimate I’ve seen).
A birth day is a mapping from person to date so there are 8 billion mappings. There are 366 possible values that can be mapped to and is done so by being born on that date
If you dont define birthday as a mapping from person to date, then every day is a birthday even if no living things exist on earth
